Mickey's Pink Bean Recipe:
This recipe has been a consistent winner
at bean cook-offs usually coming away with both
“People’s Choice & Judge’s Award.”
It’s been used for many banquets of up to 1,000 people.
Figure 1 pound of dry pink beans will feed 10 people when cooked.
Use either fresh ingredients or substitute all or part with
canned alternatives as listed. Adjust quantities to servings desired.
Equivalent Measures: 1 cup = 8 oz. 2 cups = 1 lb.
10 Servings
Pink Beans: 1 lb.
Medium Sized Tomatoes: 4 (chopped)
Or substitute Fresh Tomatoes with Tomato Sauce: 16 oz.
Or Tomato Paste, or Salsa etc.: 16 oz.
Medium Sized Onion: 1 (chopped)
Green Chilies: 3 oz.
Chile Powder: ½ oz.
Or Pepper Seed + Chile Powder
Garlic: 1 Clove (minced)
Or Garlic Powder
Ground Cumin: ½ teaspoon
Cooking Oil: ½ cup
Salt: ½ teaspoon
OPTIONAL For spicier beans add Jalapeno Peppers while cooking

My future daughter-in-law turned me on to these wonderful beans. She lives in Arroyo Grande and travels North on 101 to visit her family. She raved about these beans and I begged her to send me some. Boy am I glad she did!!! I made up a big pot, using her Grandmother's recipe and my husband and I ate the whole pot (took 3 days) and promptly ordered 25# from Hearnes. I wanted to make sure I had plenty for this winter, perfect for our Southern Oregon winters. I intend on stopping in to Hearnes whenever I travel to visit my son on the Central Coast.
